Office Soirée

Happy big Sunday ya’ll! This past Friday, Feb. 4th, I had the honor to dine with some amazing folks of the Safety Training Services, Inc. of Midwest Indiana! This dinner served as a beautiful meeting of company owners, esteemed teammates and loved family and friends. A beloved family friend connected with me about this opportunity and I feel it’s safe to say that the evening was special for everyone involved.

After guests settled in and shook of the winter chill with warm libations, the first course was served. Shrimp du Jour, du jour just means made for a particular day (fancy right). For snow days I believe a warm soup/ broth should always be served, which I have some video recipes of at my YouTube Channel. This dish was my rendition of a “warm” shrimp cocktail. A hot soup of roasted red peppers and puréed chilies served with coriander and black pepper marinated shrimp that were quickly sous vided for service, preserving the full seafood flavor. Garnished with a bacon rosette and fresh picked basil leaves.

The main course of the course of the evening to be paired with a Merlot, a 14 hour beef short rib. Full sized flanken cut beef short ribs cut into sections, seasoned with salt and pepper and hard seared before being sous vided with garlic and fresh thyme for 12 hours at 120°. Then braised at 160° for 2 hours in beef jus. For service, the ribs were broiled at 550° and served alongside sweet potato puré and crispy brussel sprouts.

Dessert was especially special for me as I’d been working on the dish for days leading up to the event. Tarta de queso AKA Basque Cheesecake AKA Burnt cheesecake was surprise for the guests. A crust-less cheesecake baked at high temps until the top is essentially burnt. The burnt sugars taste deeply of caramel with a nutty flavor as well. Slices were served with a thick caramel sauce, tart fruits and sprinkles of maldon salt bringing some sweet and savory flavor combos. The drink paring of choice you ask, apple crown royal. Don’t @ me. Trust me.
