High Protein Blueberry Waffles

Soft, crispy and pillowy sweet and savory waffles with upwards of 40G of protein to help keep you satiated and meet your health goals.

INGREDIENTS:

  • Kodiak Protein Packed Power Cakes Buttermilk — 126g

  • Unsalted butter — 3 tbsp, melted, 1/2 reserved for topping

  • Milk or milk alternative — 1 cup (240ml)

  • 1 Egg

  • Frozen blueberries — 1 cup (237g), 1/2 reserved for topping

  • Plain greek yogurt — 1 cup (140G), for topping

  • Maple Syrup — to taste, reserved for topping

  • Salt — to taste

INSTRUCTIONS:

  1. Combine milk, 1 egg, protein waffle mix, salt 1 1/2tbsp of slightly cooled melted butter in a bowl. Whisk gently until just combined or no clump-free.

  2. Add in half of your frozen blueberries and whisk again to separate berries evenly.

  3. In your pre-heated waffle maker, pour in half of your waffle batter. Close your waffle maker, set timer dial to 2-4 minutes, and turnover to begin even cooking. Repeat this process until you are out of waffle batter.

  4. While your waffle is cooking, combine desired amount of maple syrup with the remaining butter in a small saucepot or saucepan and gently warm through for topping.

CHEF NOTES:

  • Lightly grease waffle surface with choice of cooking spray needed.

  • For a crisper texture, allow waffle to cook until steam has evaporated completely as that is moisture being released.

PLATING:

Stack waffles high and garnish with frozen blueberries, greek yogurt, and maple butter.
